
Ingrédients :
2 paquets de cookies au chocolat, 100 g de beurre, 300 g de Saint-Môret, 600 g de ricotta, 5 oeufs, 200 g de chocolat, 80 g de sucre et 2 sachets de sucre vanillé
Préchauffer le four à 180°C. Réduire environ 1 paquet et 1/2 de cookies au chocolat en miettes. Évitez l'option à la main car ça les met à rude épreuve, parole de gourmande. Déposer dans le fond du plat à gâteau et mélanger avec le beurre fondu. Bien imprégner les cookies émiettés puis tasser la pâte ainsi obtenue. Enfourner pour 10 minutes puis laisser refroidir.
Faire fondre le chocolat et laisser refroidir également. Mélanger pendant ce temps au fouet le Saint-Môret et la ricotta dans un saladier afin d'obtenir un mélange onctueux et homogène. Ajouter le sucre puis les œufs un à un.
Une fois le chocolat suffisamment refroidi, l'incorporer ainsi que le sucre vanillé. Verser sur le fond de pâte et enfourner pour 50 minutes au four (le mien étant convertible et un peu capricieux il lui a fallu une bonne dizaine de minutes supplémentaires). En somme, cuisez le cheesecake en le surveillant d'un coin de l'œil jusqu'à ce que sa surface ne bouge plus lorsque vous prenez le plat en main, et que la pointe d'un couteau ressort presque (je dis bien presque) propre.
Il se peut enfin que vous soyez plus chanceuse que moi et que le sommet de votre cheesecake ne se craquelle pas à la cuisson. Qui sait, peut-être est-ce l'œuvre de l'œuf manquant. Ce que j'ai constaté cependant, c'est que dans le livre de recette dont je me suis inspirée (Cheeeese... cake toujours, aux Editions First), eh bien ce dernier était recouvert d'un glaçage. De là à ce que ce soit pour recouvrir le carnage.... Ce que je préconise ainsi en dernier lieu c'est d'utiliser si vous le souhaitez les cookies restants pour camoufler les canyons disgracieux.

Melt 200 g of dark chocolate and let it sit while whisking together 300 g of Saint-Môret cheese with 600 g ricotta. Add in the 80 g of sugar, and 5 eggs, each at a time. If the chocolate is cool enough, blend it in with a wooden spoon. Then, add in a few drops of vanilla extract. Pour the creamy mixture on top of the crust.
Cook for 50 minutes, at least until the top of the cake isn't runny anymore. Add in extra time if necessary. And let it sit for about 2 hours before removing from the pan and storing it in the fridge for about 10 hours (at least one night straight). As you may have noticed the cake crackled while cooking in my case.
I however have noticed that in the cook book it was pictured with icing on top. Maybe in order to cover evidence of such an accident. What's good is that it only spoils and its appearance and not taste. Up to you to add in the extra cookies as a decoration!
